Tropical Shrimp Kabobs

Everyone will love these sweet and savory shrimp kabobs.

Ingredients

1 10-ounce package of frozen SeaPak Jumbo Coconut Shrimp

12 large fresh pineapple chunks

12 1/2-inch-thick rounds of zucchini

1/2 medium-sized red onion, cut into wedges

1 tablespoon soy sauce

Kabob skewers

Directions

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Bake the SeaPak Jumbo Coconut Shrimp for 3 minutes until thawed enough to thread onto skewers.
  • Thread the shrimp, pineapple, zucchini, and onion alternately onto the skewers.
  • Arrange skewers on the baking sheet and bake for 5 minutes.
  • While the kabobs cook, mix the orange marmalade sauce and soy sauce.
  • Brush kabobs with sauce and bake for an additional 4 minutes.
  • Serve immediately.

Low Country Shrimp Boil

Nothing says summer like a shrimp boil. Cover your table with parchment or butcher paper, pull out the red gingham napkins, and treat your guests to this tasty shrimp boil.

Ingredients

1 12 oz package frozen SeaPak® Shrimp Scampi

2 lbs small red potatoes, cut into quarters

16 oz smoked sausage, Andouille or kielbasa cut into 16 pieces

2 Tbsp Old Bay Seasoning

3 ears of yellow corn that’s husked and cut into halves or thirds

Directions

  • Place potatoes and sausage pieces in a large pot with about 10 cups of water. Add Old Bay Seasoning.
  • Bring to a boil, reduce heat to medium-low, and simmer for 20 minutes.
  • Add the corn and continue to simmer for 10 minutes.
  • Add the frozen shrimp scampi. Continue simmering for 3 minutes.
  • Drain thoroughly and pour into a serving dish.
  • Serve immediately.

Frozen SeaPak® Jumbo Butterfly Shrimp, cooked per package instructions

Slider buns

Bacon

2 Tbsps mayonnaise

2 tsp chopped fresh basil

1 cup baby arugula

1 sliced Roma tomato

Directions

  • Cook the bacon until crispy.
  • Stir together mayonnaise and basil; this ratio makes enough for four sandwiches, so make more as needed.
  • Spread the basil mayo onto the bottom rolls.
  • Top each with one shrimp, fresh arugula, tomato slice, cooked bacon, and bun tops.
  • Serve immediately.
